Chicken Patties with Mozzarella Recipe

Ingredients:
- 1 lb (450g) ground chicken
- 1/2 cup breadcrumbs (panko or regular)
- 1/4 cup grated Parmesan cheese
- 1 large egg
- 2 garlic cloves, minced
- 1 tsp onion powder
- 1 tsp paprika
- 1/2 tsp salt (or to taste)
- 1/2 tsp black pepper
- 1/4 cup fresh parsley, chopped (or 1 tsp dried parsley)
- 4 oz (115g) mozzarella cheese, cut into small cubes
- 2 tbsp olive oil (for frying)
Instructions:
- In a large bowl, combine the ground chicken, breadcrumbs, Parmesan, egg, garlic, onion powder, paprika, salt, pepper, and parsley. Mix well until all ingredients are fully incorporated.
- Take a small portion of the chicken mixture (about 2-3 tablespoons) and flatten it in your hand. Place a cube of mozzarella in the center, then fold the mixture around it to form a ball. Flatten slightly into a patty shape. Repeat with the remaining mixture and cheese.
- Heat olive oil in a large skillet over medium heat. Add the patties to the skillet, ensuring they’re not overcrowded. Cook for 4-5 minutes on each side, or until golden brown and cooked through (internal temperature should reach 165°F/74°C).
- Serve the patties warm with a side of salad, pasta, or a dipping sauce like marinara. Enjoy the gooey mozzarella surprise in every bite!
